A restaurant near me does a fried chicken sandwich with pimento cheese, jalapeño bacon, and green tomato jam and it’s insanely good. I also add it to the normal sandwiches you make at home. I think I may have just turned myself on. cracker-barrel cheese is the ultimate cheese for pimento spread. 8 oz block of cheese for every 4 oz jar of pimentos.
